On Photoshop it wont let me create a new hue and saturation layer, new adjustment layer or change the colours, please can anyone help?

Thats odd....maybe you have greyscale for your color settings?

^he probly goes have grey scale
Make new document, and change it to RGB or w/e instread of grey scale
